Marinate proteins for optimal flavor without overdoing it. Fish and seafood need only 15-30 minutes (acid will start cooking them). Chicken benefits from 30 minutes to 2 hours. Beef can handle 2-4 hours. Never marinate at room temperature - always refrigerate. Acidic marinades can make meat mushy if left too long.
