About the bread proofing timer

Time your bread proofing perfectly for optimal rise and flavor development. First rise typically takes 60-90 minutes at room temperature (68-75°F). Second rise is usually 30-45 minutes. Use the poke test: dough is ready when an indent springs back slowly. Cold proofing in the fridge develops more complex flavors.
